
A boiled egg, chopped, with a generous spoon of mayonnaise, classic deli filling, found in all the supermarkets. Absolutely delicious, and very quick to make yourself at home, with just 2 ingredients!
What do I need to make an egg mayonnaise sandwich?

I didn’t notice that little bit of shell left when I took this picture! Two eggs will make two sandwiches
- some delicious thick sliced bread
- an egg, boiled. Medium or large
- mayonnaise, the good stuff or the value kind, doesn’t seem to matter much
- no need for spread of any kind
How do I make an egg sandwich with mayo?
- boil one egg per sandwich for 5 minutes to get a lovely jammy centred egg – not too hard boiled, or still snotty
- cool in cold water
- peel the egg
- mash the egg with a fork to a fine mulch
- add the mayonnaise to the mixing bowl
- give everything a thorough mix
- that’s it, store, covered, in the fridge until needed
- once ready to eat, spread the egg and mayonnaise mixture onto a slice of thick cut bread, top with the other slice, cut in half and eat, or wrap ready for packed lunch time
- there’s no need for butter or anything else
How to store egg mayonnaise mixture
In the fridge in an airtight container, this mix will sit quite happily for 3 days.
This filling will not freeze well, so is not recommended. The egg will go rubbery, and the mayonnaise will split
What other ingredients could be used in an egg mayonnaise sandwich recipe
- When pricing this deli sandwich mix, I noticed that Aldi had many delicious mayonnaise options – roasted garlic, peri peri or lemon and black pepper. Any of these would make a delicious variation.
- add a dollop of Dijon mustard
- You could add finely chopped vegetables
- cress! My favourite with an egg sandwich
- very finely sliced celery
- grated carrot
- fine chopped black olives
- layer in a few green leaves of some sort
- change up the bread to sourdough, granary, floury baps, muffins, wraps or anything else you fancy
- add some sliced gherkins
- swap the mayonnaise for soft cheese

- 1 sandwich, so 2 slices of bread. Toastie bread, 75p, 7p for 2 slices
- Cost per sandwich 3p + 20p + 7p = 30p
- Shop Bought
- The equivalent in Aldi at the time of writing is £1.49 for 220g. One pot says it is 5 servings, so would make 5 sandwiches, so 30p for the filling for each sandwich
- Plus 7p for bread
- Total cost using Aldi ingredients = 30p + 7p = 37p
So there’s not a lot in it cost wise …… but – you know what’s in it, you can customise it to your hearts content and I always think that homemade made food tastes SO much nicer.
What else can I use this for
This recipe shows quantities for one sandwich, but you can easily make a bigger batch, and I find it really handy to keep in the fridge ready for ravenous teenagers. If you don’t want to use it all for sandwiches, what else can you do with it?
- stir it through cooked pasta and enjoy for lunch or tea
- top a baked potato with it
- lovely on hot toast too
