
Pea soup, a lovely quick and simple soup made using frozen green peas and not a lot else. Very quick to make, about 15 minutes start to finish. Enjoy with a slice of lovely bread and butter, a vegetable muffin, cheese scone, cheese on toast or anything else you fancy,

What do I need to make frozen pea soup
- frozen peas
- milk
- vegetable oil
- salt and pepper
How To Make This Frozen Pea Soup Recipe
- Simmer frozen green peas in 500ml water for a couple of minutes
- Whizz with a stick blender or in a liquidiser until smooth.
- Make a paste with a little flour and oil and stir into the soup.
- Whizz again and simmer very gently for a minute a two to cook off the flour.
- Stir in some milk. Use plant milk and your soup will be vegan
- Season with salt and pepper

If you are following Meal Plan 1, you are likely to need more calories at lunchtime, so use one or more of the cakes and bakes to follow the soup
Variations for Green Pea Soup
- Add a sprig or two of mint if you have any. Or half a tsp of dried mint
- Some big butter beans would be delicious in this, adding extra protein too
- Or add 100g of red lentils – you would need to simmer for 20 minutes for this variation
- If you prefer, you could use a plant milk
- use butter, or any other fat, instead of vegetable oil
- use half green peas and half sweetcorn – my daughter would love this, they are her favourite vegetables!
- reduce the amount of water for a thicker soup, or add more flour
