Kielbasa with Corn & Peas


I used to be able to get kielbasa at Walmart for about $2.50. Less, if I had a coupon. Now its $3.99, which is cheaper than I paid a few weeks back at Hannaford. This recipe is a little different than the kielbasa and corn recipe I shared then. This time I used different seasonings and added peas to the mix.

I’ll take savings where I can. Hannaford is usually more expensive than Walmart, but I like to shop there sometimes because Walmart doesn’t have some of what Hannaford does, like my yogurt.

I didn’t grocery shop for this week but had the kielbasa in the freezer. I decided I wanted to make it for my workweek meals. Because I didn’t have a lot on hand, I made simple things for the week.

Frugal cooking includes practices such as using up what you have on hand. Since I didn’t grocery shop, I had to use what was available to make this recipe. All of the ingredients other than the kielbasa were leftovers from previous meal prep days, and the seasonings I always have on hand.

To save money, I am starting to grow my own herbs again. I do have a rosemary plant started but am using up what I have in the jar before I start using what I’m growing. No need to be wasting food. Food waste is money waste.

Kielbasa, Corn & Peas

Serves: 5 (4 if you want bigger servings)

Ingredients:

(A cast iron skillet was used for this, but you can use a regular one and make this on the stove top.)

Kielbasa

1/2 tsp garlic in oil

1/4 cup frozen corn

1/4 cup frozen peas

sea salt to taste

pepper to taste

thyme

rosemary

  1. Put 1/2 teaspoon of garlic in oil in a cast Iron skillet and slide the pan into a 350* oven.
  2. Allow the garlic to cook while you slice the kielbasa and gather the corn, peas and seasonings.
  3. Remove the skillet from the oven, placing it on a towel on the sideboard.
  4. Arrange the kielbasa in the pan, a cut side down.
  5. Sprinkle seasonings over the top of everything. I don’t measure these, preferring to go by taste. I used half of what I thought I would need at this point.
  6. Put the skillet back into the oven for 10 to 15 minutes to allow the bottoms of the kielbasa to cook.
  7. Remove the skillet, again placing it on the towel.
  8. Turn each kielbasa in the pan.
  9. Add 1/4 cup each of frozen corn and peas.
  10. Sprinkle more of the seasonings over everything. Again, this is done according to taste. Taste test things as you work.
  11. Place the pan back into the 350* oven and allow to cook another 10 to 15 minutes, or until done.
  12. Remove from oven. Serve or split into portions for this week’s work meals.

Notes:

  • You can use any kind of sausage for this recipe. Go ahead and get the most affordable choice. Wait for sales or use coupons to get better deals.
  • Stock up when you can get those deals. Kielbasa will last a while in the fridge and can be frozen.
  • You can also use any seasonings you like. Maybe you like different seasonings than I used. That is fine.
  • Grow your own herbs to save money. You can keep a pot of each going year-round on a windowsill. Just reseed as needed. Choose organic seeds, heirloom when possible.

  • Serve alongside any salad.
  • Serve with raw or roasted vegetables.
