Tips for This Week’s Meal Plan
- If you happen to have leftover sweet potato chili, use that as the base for Tamale Casserole–simply add the cornbread topping as bake as directed.
- Use sweet potatoes for the chili, burritos for lunch, and the Chicken Tex Mex Skillet. I also recommend baking a few to have for delicious breakfast sweet potatoes.
- No Instant Pot? To prepare the Sweet and Sour Chicken, prepare the sweet and sour sauce, mixing the cornstarch right into the sauce. Sear the chicken in a large skillet. Once the chicken is golden and browned, add in the peppers, onions, pineapple and sauce. Bring to a bubble, reduce the heat, and simmer until chicken is cooked through and sauce has thickened. No need to add additional chicken stock.
- You only need 1/2 cup of beef broth for the Tater Tot casserole. Feel free to replace that with chicken stock or vegetable broth, as both are used throughout the week.
- Feel free to omit the egg from the Mexican Lasagna–it won’t set up as well, but it will still taste delicious.
