Tips for This Week’s Meal Plan
- On Sunday, set aside chicken chili leftovers to use to make burrito bowls on Wednesday.
- On Monday, prepare balsamic vinaigrette and use for side salads throughout the week.
- Use russet potatoes to make potato soup and for baked fries. Leftovers? Use them to make the potato frittata for breakfast (and if used bacon to top your soup, add that to the frittata as well).
- On Tuesday, prepare extra rice to use for Wednesday’s meal as well.
- For Wednesday, simply serve the leftover chili over leftover rice for a quick and filling meal.
- Prepare 2-3 extra links of sausage to have on hand to make a quick pasta sauce for Saturday’s dinner. Use the rest to make grinder sandwiches for Thursday’s dinner.
- No Instant Pot? Use the slow cooker to make peppers and onions by combining the seared sausage with sauteed onions and peppers, garlic and spaghetti sauce in the slow cooker and cook on low for 4-5 hours. Omit the added broth. Swap out the Spanish rice for plain rice prepared on the stove.
