Tips for this Week’s Meal Plan
- Instead of purchasing ground chicken for the chicken burgers, use my directions in the post to make your own “ground” chicken using chicken breast. Then you can use a large pack of boneless skinless chicken breasts for all the recipes this week. And keep in mind ground chicken will work for the sloppy joe recipe as well.
- Use any vegetables you like for the vegetable kabobs. You will need onions, peppers, and zucchini for other recipes, so those are all great options for the kabobs.
- Make a large tossed salad and balsamic vinaigrette and use it for dinner on Thursday and Friday. It also pairs well with the stuffed mushrooms.
- You will need romaine for southwest salad and spinach for the mushrooms. Add any leftover spinach to side salads or quinoa salad for lunch.
- Prepare pesto yourself (with fresh basil, pine nuts, olive oil, lemon, garlic) for the best flavor (super easy) or keep it simple with jarred/refrigerated pesto
- Use both tomatoes and mozzarella to make the pesto pizza and pesto chicken.
- Make extra quinoa for the stuffed portobello mushrooms and then use it for a light salad for lunch.
- Use 4 buns for Sunday’s burgers and 4 for sloppy joes on Saturday (or purchase 2 packs for more!)
