  • I just use one of the cheap Panettone, you won’t notice the extra quality of a more expensive one in this. The one I got from Sainsbury’s was 500g, when pricing up at Aldi.com, there were no 500g Panettone. If you get a 750g one, you could either use 500g and use the extra for something else, or use the whole thing, there is plenty of the creamy mixture. I couldn’t have got an extra 250g in my big glass bowl though, so you’ll have to play it by ear. Perhaps make a small one with the extra 250g and some of the creamy mix? 
  • strong coffee – I use decaffeinated as I can’t have the caffeine, it works just fine
  • Marsala, Port or something like that. I can’t have alcohol, but the little bit in a portion is alright for me. If you don’t want the alcohol at all, use extra coffee and a tsp of vanilla paste
