With the arrival of spring, I start to want lighter foods. How about you? I start craving fruits more and more, and don’t want particularly heave foods like I did during the late fall and into winter. With the season picking up at The Inn soon, I also won’t have time to warm up my meals that I bring in, so I’ll need to think more about what I am bringing with me.
Berries and cream in these cute little mason jars are the perfect size for my lunch sack and are going to be super quick to grab when I have a minute. They are also easy to make. And the coconut cream is not sugar laden, meaning this is actually considered a healthy snack or dessert.
Strawberries & Cream
Serves: 4
Ingredients:
10 large strawberries
1 – 8.5 ounce can of coconut cream
pure vanilla flavoring
- Wash the strawberries in water and 1 tsp baking soda or vinegar. This will help to get rid of any dirt and other things you don’t want.
- Slice the strawberries, reserving the tops if you will be making strawberry vinegar as well.
- Put the slices into little canning jars or other small containers.
- Mix a few drops of vanilla in with the coconut cream in a small bowl. Taste for flavor, and add one drop of vanilla at a time, stirring and tasting in between, until you have the vanilla flavor you want.
- Spoon the vanilla coconut cream over the strawberries.
- Secure the lids.
- Refrigerate. They should last three or four days in the fridge depending on how recently picked they were.
Notes:
- Try using other berries instead. Blueberries would be nice, or raspberries. I might even try this with blackberries. I noticed the blackberries were cheaper than other berries at Walmart last week.
- Maybe use a mix of berries rather than just one type.
- You could also try other flavorings. Maybe almond, or orange.
Serving Suggestions:
- Put in your lunch sack for work.
- These would also be great “desserts” for children’s lunch boxes.
- This can be a side for a pasta meal as well.
- You can also make them for BBQ’s, or make up a big bowl for any get-together and just let people dish it up on their own.
- This would also go well with just about any breakfast, and would be amazing to top French toast, waffles, or pancakes with if you eat those things.
