The Egg Bake


I mentioned previously that I had made an egg bake to use up the eggs I had on hand. Eggs are a precious commodity these days, as I am sure you know. At this point I am spending almost $7.00 for organic store brand eggs. Eggs have been higher than this recently. I always wonder how much people in other areas are spending on them.

Once in a great while my bestests’ mom hooks me up with some from a friend of hers. Sometimes I pay a few dollars. Sometimes I don’t. I love those eggs! I notice the taste is much better than the store-bought option. I also feel they are probably healthier. I haven’t received any in a while, so I went ahead and got some last week. I made fried eggs with them four of them and used up the rest of them in this recipe.

Baked eggs are super easy, and technically only require two ingredients plus oil or butter for the pan. Once in a while I use add-ins for something different. This weekend those add-ins were ham, cheese, and seasonings. You can also use however many eggs you want. I don’t measure with this recipe.

Baked Eggs

Makes 2-4 servings

Ingredients:

8 eggs

water (could also use milk/milk alternative)

1 slice deli ham

1 slice deli American cheese

seasonings of choice (I used just salt & pepper this time around.)

coconut oil or butter for melting.

  1. With the oven heated to 350*, melt some coconut oil in an 8×8 baking dish.
  2. While the oil is melting, cut the deli meat and cheese into small pieces.
  3. Whisk up the eggs with a little water, until the yolks and whites are well combined. I think for 8 eggs I used between 1/4 cup and 1/2 cup of water. I use enough to get the color and consistency I want.
  4. Add the meat and cheese to the eggs and stir.
  5. Remove the baking dish from the oven when the coconut oil is melted. Tip the baking dish and make sure to coat the bottom and as much of the sides as you can. Be careful not to burn yourself.
  6. Place the baking dish on the counter and pour the egg mixture into it. I try to be sure the ham and cheese are distributed somewhat evenly so there isn’t just a big clump in the center.
  7. Season with what you want. I chose salt and pepper this time, but sometimes I also use parsley.
  8. Bake at 350* until done. I go in after about 10 minutes and mix it all up and will do so again after another 10 minutes. Every 10 minutes until done. It usually takes just under 30 minutes in my toaster oven. I do this because I want them to be scrambled eggs, but also because I think it helps things to bake up better.

Notes:

  • Because of the cheese, some spots on the top will brown up a bit. This is fine.
  • You could use another kind of oil for the pan, in which case you would maybe not have to warm the pan to melt the oil before adding the ingredients.
  • Mix up your add-in options. Try other meats and cheeses, and maybe some diced tomatoes and spinach or other vegetables.
  • Use any kind of seasonings you like.
