Tuna and Sweetcorn Sandwich – Thrifty Lesley

Tuna and sweetcorn, with a generous spoon of mayonnaise, one of the most popular sandwich fillings in the UK, and with good reason – it’s delicious! If you buy those little pots of deli filling from a supermarket, you might be surprised to know that you can make it in moments for half the price.

What do I need to make a tuna and sweetcorn sandwich?

a blue bowl with tuna, sweetcorn and mayonnaise in it, with a large spoon on the side.

  • some lovely thick sliced bread
  • a tin of tuna, well drained
  • sweetcorn. I tend to use tinned for ease, well drained, but frozen is just as good, it will need cooking first
  • mayonnaise, expensive or own brand, doesn’t seem to matter much

How do I make a deli tuna and sweetcorn filling?

tuna and sweetcorn deli filler, mixed up, in a blue bowl.

  • open the tin of tuna and drain well. I usually tip it into a sieve over the sink and give it a little shake until it stops dripping
  • tip the tuna into a mixing bowl
  • open the tin of sweetcorn, or cook the frozen sweetcorn.
  • add the sweetcorn to the mixing bowl
  • add the mayonnaise to the mixing bowl
  • give everything a thorough mix
  • that’s it, store, covered, in the fridge until needed. It will keep in the fridge for 3-4 days

  • once ready to eat, spread a quarter of the mix onto a slice of thick cut bread, top with the other slice, cut in half and eat, or wrap ready for packed lunch time
  • there’s no need for butter or anything else

This is a very easy recipe to upsize or downsize, simply use equal quantities of all three ingredients.
