
Originally, I was only going to need three work meals this week. Every other Thursday my paycheck usually hits my bank, and I treat myself to a salad at Applebee’s before doing my grocery shopping, then I head to work. Technically payday is every other Friday but with my bank I generally get it on Thursday. If it is a pay period we get a bonus, or there is a holiday, it might not hit my account until Friday. Honestly, it happens this way so rarely, that I wasn’t expecting it this week. It had happened two of the last three pay periods. It just doesn’t make sense. But it is what it is, as they say.
When I checked my account this morning, I realized the check didn’t hit, so today’s lunch and grocery shopping was out of the question. This meant I needed to throw some foods into my lunch sack quickly. Read on to see what that looked like.
This also means that I will have to pay extra to have my groceries delivered this week. To be honest, I’d skipped the weekend groceries the previous two times, so I am running low on food to make meals with. I don’t think I can skip it again this pay period, but I will look around some more at home before I order to see if I can stretch what I have.
My first three work meals this week were easy enough. I made some kielbasa with corn and peas, had some on Sunday, then split the rest between the three meals. I also ate the last of the cabbage I’d had in the fridge and, last night, I had celery sticks with my meal. It was filling.
This morning, I looked in my near empty fridge, and at my shelf of foods that take time to prepare. What I settled on was homemade garlic dill pickles, an orange, and the rest of the pepperoni and mozzarella from last weekends’ meals. I am hoping it’s enough to keep me going until I get home.
