
Just a couple of blocks from where I lay my head at night is a spot that’s quietly cranking out some of the best Mexican food in Miami—Don Maguey Mexican Restaurant.
When a friend told me I needed to check it out, Marcela and I didn’t waste any time. We showed up the very next day for lunch. And guess what? We already knew one of the owners—Angelica, who had been our regular server for years at Mi Rinconcito Mexicano.
Now, she and her husband, Chef Zeledón, are the power couple behind Don Maguey. Their mission? Serve up killer, comforting, real-deal Mexican dishes—and they’re doing precisely that.

At Don Maguey, our focus is on cooking regional Mexican food using ingredients imported directly from Mexico, giving us a unique and authentic Mexican flavor.
The name Don Maguey originates in memory of señor Lino Gasga, known in Oaxaca as “Don Maguey”. A great jímador who managed to pass on this tradition across generations.
With a machete in hand and using his guaraches, he went out every morning to work on the ground. Like him, we wake up every day to prepare you delicious Mexican dishes.

A Mole Moment and Chilaquiles Crush


Marcela couldn’t stop raving about her Pollo en Mole—a baked chicken leg and thigh drenched in a deep, rich Oaxacan black mole, served with rice, beans, and tortillas. Meanwhile, I locked eyes (and teeth) with the Chilaquiles en Salsa Verde, tortilla chips smothered in a tangy green sauce with sour cream, cheese, onion, and cilantro. You can choose chicken, beef, or chorizo—I went chorizo and have zero regrets.




We started that meal with a plate of nachos and finished with their tres leches cake—a flawless one-two punch that bookended the meal with crunchy comfort and sweet decadence.
Round Two: Queso Fundido Time


I said the Queso Fundido would be mine next time, and I kept my word. On our return visit a couple of weeks later, I ordered it with chorizo. As my Burger Beast crystal ball predicted—it was absolutely killer. Gooey, salty, spicy, and now officially #burgerbeastapproved.
We’ve been back multiple times since, with no rhyme or reason other than our day long cravings dragging us back in. We’re not on a schedule; Don Maguey keeps calling us like a siren of salsa verde, so good.
Esquites vs. Elotes – A Corny Battle


There’s elote on the menu, but the esquites are what do it for me. They’re served warm, with cheese, lime, and that little pool of flavorful broth at the bottom—practically begging to be slurped. And I do. Repeatedly. At this point, I’m not sure which I love more: the queso fundido or the esquites.


Enter: Tacos en Costra


Then, like a wrestling run-in from the top rope, the Tacos en Costra made their dramatic entrance into our lives. Two flour tortillas served open-faced with crispy cheese, cabbage, pickled onions, and your choice of beef or shrimp. We went beef then shrimp. And we went back for more.
