Understanding food provenance, or the origin and journey of food from its production to the plate is an integral part behind every informed choice. And a better appreciation and enjoyment of any dish. It’s a story that’s at the very heart of the Discovery Primea and Canada Beef collaboration, retold and celebrated with each curated dish from the Fire & Flavor menu at Flame. Host Issa Litton said it best when she described Fire & Flavor during the launch. “This collaboration comes to life through a menu that honors the richness, versatility and signature flavor of Canadian beef and gives it the spotlight it deserves. This isn’t just a launch, it’s a celebration of shared values, craft, and the joy of great food.”
At the formal launch, the Canadian delegation was led by The Honourable RJ Sigurdson, Minister of Agriculture and Irrigation of Alberta; Albert Eringfeld, Canada Beef Vice President of Export Market Development; Brodie Haugan, a multi-generational cattle producer from Alberta’s ranching community; Diedrah Kelly, Embassy of Canada Executive Director for the Indo-Pacific Agriculture & Agri-Food Office; Louise Pasadilla, Trade Commissioner of the Alberta delegation; Jason Hale; Deputy Minister of Agriculture and Irrigation and John McDonald, Managing Director for the Indo-Pacific Region. David Pardo Ayala, Discovery Primea General Manager welcomed the Canadian delegation with Director of Marketing Communications Rossana L. Unson and Executive Chef Luis Chikiamko. “With the expertise of Chef Luis Chikiamco and the power of the Josper oven, we had everything we needed to bring out the best in Canada Beef,” shared David Pardo Ayala. “We’re proud to be working together on this flavorful collaboration.”

Executive Chef Luis Chikiamko continues his exploration of the decadent savory richness of Canadian beef drawing inspiration from global cuisine with the Canadian AAA Chuck Flap Carne Asada “Taquito” with chimichurri, chipotle mayo and pico de gallo and Canadian Angus Chuck Eye Roll “Menchi Katsu” Nuggets, a savory bite of ground beef nugget filled with Mozzarella, Camembert and Japanese curry dip. Each creation offers unique flavors highlighting the fresh, clean yet decadently rich notes of Canadian beef.
The Canadian AAA Ribeye Beef Tartare with mustard, capers and red onion topped with crostini is a deceptively simple dish highlighting the pure, clean and flavorful depth of Canadian beef in yet another creative rendition. The mustard, capers and red onion tempers the savory richness of the Canadian AAA Ribeye Beef Tartare without overwhelming its natural flavors. Showcasing his mastery of Asian flavors, Executive Chef Luis Chikiamko presented his elegant take on a Vietnamese classic with the Canadian Beef Short Plate Pho with mushroom gyoza, Asian vegetables and spices in a rich beef broth. The deep, bold flavors of Canadian beef become delicately nuanced yet full of flavor in another masterful rendition of finely balanced notes. The light broth with its subtle beefy notes becomes the flavorful base of the dish while the mushroom-filled dumpling and Canadian Beef Short Plate completes the medley of rich flavors.
A soothing sip of the Canadian Pillitteri Estates Winery Cabernet Franc becomes the perfect finishing touch after each savory bite.
