Vietnamese Sesame Shrimp Noodles (Mi Xao Tom) is my recipe of the day with the blogging group Alphabet Recipe Challenge. We meet every other week to post recipes on ascending letters of the alphabet from A-Z. This week we are sharing recipes involving the letter “X”. My letter X is for “Xao”, the Vietnamese word for Stir-Fry.
Along with “Xao” we also have the words “Mi” which stands for noodles. And “Tom”, which refers to shrimp.
I like this dish for it’s light flavor, not being heavy on sauces or deep fried ingredients. Most people who know me know I have been on a long term weight reducing regimen. I do allow myself a normal dinner, but like to keep it lighter. And of course my portion size is reduced for losing weight.
These noodles aren’t spicy or anything. However, if you like, I recommend adding a touch of non-fermented chili paste (sambal) over something like Sriracha, which is also chili paste, but is fermented so the flavor is different. But you should use whatever you prefer, if any at all.

Vietnamese Sesame Shrimp Noodles (Mi Xao Tom)
Vietnamese Sesame Shrimp Noodles (Mi Xao Tom), which is an noodle stir-fry with vegetables and an orange sesame sauce.
Noodles:
- 8 ounces thin spaghetti cooked al dente
- 6 ounces shrimp peeled and deveined
- 1 tablespoon peanut oil
- 2 tbsp butter
- 1 small red bell pepper cut into strips
- 4 ounces broccoli florets
- 2-1/2 ounces snow pea pods trimmed
- 1/2 cup carrots shredded or diced
- 1 fresh jalapeno sliced
- 2 scallions thinly sliced
Sauce:
- 1/4 cup oyster sauce
- 1 tsp garlic chopped
- 1 teaspoon grated ginger
- 1 tablespoon soy sauce
- 2 tbsp honey
- 1/2 cup orange juice
- 1 tablespoon dark sesame oil
- salt and pepper to taste

Stir together the sauce and set aside

Cook noodles until al dente and drain.

Heat peanut oil in a large deep skillet; stir-fry the peppers and pea pods until crisp-tender. Leave the scallions aside for a moment.

Add the shrimp and cook until lightly curled.

Add the noodles (give them a rinse and drain if they’re stuck together), along with the sauce and salt and pepper to taste.

Serve when heated through.
