Traditionally, this dish is made by preparing a fresh masala paste — roasting whole spices, cooling them, and grinding them with coconut, onion, and garlic. However, in today’s recipe, I’ve used Mangalorean curry powder to simplify the process. This ready-to-use spice blend captures the essence of the original masala, making the recipe quicker without compromising on flavor.

This dry sabzi is perfect for those who love fuss-free cooking with authentic taste. It pairs wonderfully with dal-rice or chapatis, making it a versatile and nourishing choice for everyday meals.

What is Sukka?

Sukka refers to a dry preparation. In Mangalorean cuisine, sukka dishes are typically made with vegetables or meat, flavored with coconut, garlic, and a special sukka masala. Step-wise recipe with pictures

Wash the French beans, remove the strings, and chop them diagonally.

Steam the beans until just tender. Set aside.

Heat oil in a pan. Add mustard seeds and let them splutter. Add curry leaves and chopped garlic. Sauté for a few seconds until aromatic.

Add chopped onions and sauté until soft and translucent.

Add the chopped tomato and cook until it turns soft and mushy.

Add the steamed French beans to the pan. Mix well. Add turmeric powder, salt, and the Mangalorean curry powder. Stir to coat the beans evenly.

Add the freshly grated coconut.

Mix everything well, cover, and cook on a low flame for 2–3 minutes. Serve hot with rice or rotis.

  • 1 tsp oil
  • 1 tsp mustard seeds

  • ½ tsp turmeric powder
  • 3 tbsp Mangalore curry powder
  • salt to taste
