These Cake Batter Pudding Cookies are soft, easy to make and absolutely deliciously packed with cake batter flavor. These are always a hit wherever they go!
I first made these pudding cookies long ago on the blog, back in 2011. Pudding cookies are a staple in my home and we love changing them up.
The pudding mix helps to keep these cookies soft for days, that’s one of my favorite things about pudding cookies and why they are always my cookies I fall back on.
Because this batter has a few dry ingredients added, it will be thicker than most dough. Please keep that in mind. I live at a higher altitude, so that could be one reason I don’t struggle to much with the thickness of this dough and why my cookies still flatten. If you are at lower altitude, try adding 1 full cup butter vs the 3/4 listed in this recipe if you find that your cookies did not flatten out.

These are a favorite with my entire family. We change up the sprinkles for season or holiday and the kids love to help out and make them, too.
One tip I have is to not over bake. I bake them on the lower end of the time frame, 8-9 minutes, just until the edges are slightly golden. That helps them to be softer cookies.

Cake Batter Pudding Cookies
- 3/4 cup butter softened
- 3/4 cup brown sugar
- 1/4 cup sugar
- 3.4 ounces instant vanilla pudding mix dry
- 3/4 cup yellow cake mix dry
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 2 1/4 cups flour
- 1/2 teaspoon salt
- 1/4 cups sprinkles

Preheat oven to 350 F.

Stir together flour, salt and baking soda and set aside.In a stand mixer, cream butter and sugars together.

Add in pudding package and the 3/4 cup of cake mix and beat until well blended.

Add eggs and vanilla and mix until smooth.

Add flour mixture slowly until well incorporated.

Mix in sprinkles sprinkles.

Roll into 1″ balls and place on greased baking sheet.

Bake at 350 F for 10-12 minutes.
