Easy Kimchi Fried Rice
Making fried rice at home is surprisingly easy when you use store-bought Kimchee as the base and jazz it up with Spam or other leftover proteins. K-Mama Sauce is available at your favorite Korean grocery store, Target, and Amazon.
Prevent your screen from going dark
- 1 Tbsp sesame oil
- 1/4 teaspoon dried chili pepper gochugaru if you have it
- 1/2 cup white onion chopped
- 1/2 cup Spam cubed or other protein
- 1/3 cup kimchi or other pickled vegetables
- 1/4 cup K-mama Sauce
- 1 cup white rice day old or frozen
- 2 tsp pickled jalapeno slices chopped, you can save a few whole slices to garnish
- 1/4 cup green onions 1 Tbsp reserved for garnish

Add oil to skillet with chili pepper and chopped onions. Cook for 3 minutes.

Add Spam and brown until you get some crispy bits.

Add kimchi and any other pickled vegetables and saute with K-Mama Sauce.

Kimchi is something I have come to later in life, but I wished I had tried it in my twenties as its the base for so many easy meals. It’s spicy, tangy, and full of umami with all the fermented vegetables.
