Chicken Thigh Burritos

Ingredients
- Lane’s Magic Dust
- Burrito Tortillas
- 500g Chicken Thighs, Boneless
- 1x Tomato, diced
- Coriander, chopped
- 1 Red Capsicum, chopped
- 1 Red Onion, diced
- 200g Cheese, Grated
- 1 can Corn
- Olive Oil
Directions

Season chicken thighs generously with Lane’s Chook Dust

Grill over high heat on the BBQ or in the pan until completely cooked through.

Wrap chicken in foil and allow to stay warm while it rests.

In a saucepan on medium heat, add some olive oil and cook onions and capsicum until translucent

Build burrito with rice, chicken, cheese, tomato, grilled onion mixture, corn and chopped coriander.

Wrap it all up together and slightly toast in the pan until golden brown
