
I worked in a spa resort 2 days a week to give the main chef a break. Located in the Canadian wilderness on a lake with big windows in the kitchen looking out over the lake catering to the high end, mostly female clientele 95 % with a max of 16 guests and did 3 meals a day all vegetarian and vegan and giving cooking classes to that clientele at night and really enjoyed it, it was a nice space, the clientele was a little eccentric though, lol. I love vegetables and we have a pretty decent representation of mostly vegetarian but also vegan. We generally work with specialty purveyors and local farmers and basically follow the season.
