
I love guacamole, but after a few minutes of going at the avocados with a potato masher I start to feel pretty ineffectual. The lumps! They start off large, and by the time I’m nearly done and have grabbed a fork to finish the mashing them, the lumps are just, well, smaller.
And while it’s delicious, the texture just always feels a little off to me.
So, when I was cooking for a get together last week it dawned on me to put the avocado in “Baby Blue,” my mini food processor.
And it was a revelation! The avocado was light and aerated with no lumps. Even better? It took 10 seconds to accomplish what normally takes me minutes. So, feeling pretty good about myself at that point, I scooped the avocado into a bowl and dropped the (whole) cherry tomatoes, chunks of onion, quartered jalapeno, and roughly chopped cilantro into the food processor. Within a blink of an eye everything was set. So, I added the seasonings and lime juice and let it rip for another couple of seconds then I poured it over the processed avocado.
I kid you not, the whole guacamole start to finish took less than a minute to make.
Less than a minute!
And, it was the best guacamole that I’ve ever made. Spicy, bright, creamy, and completely addictive. Bonus: It ended up being pretty flattering too, because my teenaged nephew slathered it on every piece of steak, pork, and chicken that was on his plate at the cookout.
If that guacamole was Sally Field winning an Academy Award it would have cried, “You like me! You really, really like me!”
So, when you’re craving guacamole in literally seconds just grab your ingredients and your mini food processor.
It will make you very happy.
Thoughts: This is a weird factoid, but when you keep a pit in the guacamole it magically keeps it from oxidizing and turning brown. Or, that might be an old wife’s tale. Or, it could be a case of “correlation not equaling causation.” Either way, I always keep the pit in the guac, and it stays green for hours.


Easy, Creamy, and Delicious Food Processor Guacamole
What happens when you have some avocado, roughly chopped onion, a halved jalapeno, a handful of cherry tomatoes, cilantro, lime, spices and a mini food processor? You have guacamole in about 1 minute! Bonus: It’s insanely creamy and delicious too!

Ingredients
- 2 ripe avocados, halved, pitted, and pits reserved
- 1 jalapeno, halved, seeded and deveined
- 1/2 small yellow or red onion, roughly chopped
- 1/2 cup cilantro, rough stems removed
- 3/4 cup whole cherry tomatoes
- 3 tablespoons lime juice
- 1 teaspoon kosher salt
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon hot smoked paprika
Instructions

Scoop the avocado into the mini food processor. Process until smooth, approximately 10-seconds.

Place the avocado in a bowl.

Add remining ingredients to the food processor, and process to desired consistency. Stir into the avocado.

Place an avocado pit into the center of the guacamole.

Cover tightly with plastic wrap. Refrigerate until serving. Store in the refrigerator for up to 1 day.
