Avocado toast has become incredibly popular over the past several years, inspiring all kinds of delicious and creative variations.

Avocado toast is typically savory — like my favorite avocado toast with soft boiled egg — but have you ever tried a minty avocado toast? How about three different ways with fruit?

While this is definitely isn’t a dessert, it’s a sweeter take on avocado toast — and it’s simply stunning.

You can throw these toasts together inside of 15 minutes and you will be a star of any party — whether you’re hosting or bringing them to share.

About the Ingredients

  • avocado – For this recipe we want the avocado to be soft but not too soft — not mushy.
  • fresh mint – Try to find bunches of fresh mint with small leaves, which tend to be softer than those with larger leaves. No worries, it you can only find larger leaves — both work.
  • lemon juice – I always use Meyer lemons over regular lemons when given the option. Meyer lemons are a touch less tart and a touch sweeter. And with a thinner skin and fewer seeds, they are incredibly juicy.
  • your favorite colorful seasonal fruits – Strawberries, mango and grapefruit are my go-tos for this recipe, but you can use your favorites. (I’ve also listed a bunch of ideas in Variations below.)
  • the toast – I use a French baguette for this recipe. Use any bread you like, keeping in mind the measurements in this recipe are for average-sized baguette slices.

How to Make Minty Avocado Toast with Fruit

Use a fork to mash avocado. Then mix it with the chopped mint and lemon juice, and season to taste with salt and pepper.

Recipe tip: I love keeping the avocado mixture on the chunky side, but mash it to the consistency you like.

Slice the fruit, toast baguette slices just until edges are golden. Then spread the avocado-mint mixture on each one.

Recipe Tip: I toast these small baguette slices under the broiler, but If you choose to use larger slices of bread, a toaster is likely easier.

Arrange the fruit slices on top, followed by a light sprinkling of Feta cheese (if desired).

Variations

  • Vegan version. Just don’t use the Feta on top. Easy!
  • Use your favorite fruit. Use your favorite fruits! The possibilities are endless: papaya, sliced red grapes, orange slices, blueberries, blackberries, plums, peaches and nectarines would all be fun and so tasty.
  • Skip the fruit. If you want a bit less hoopla, you can skip the fruit all together. The minty avocado toast recipe on its own has such a unique and delicious flavor.

Can you make it ahead?

This one is definitely best if it’s made as close to serving time as possible. The lemon in the avocado mixture will help it keep it’s color for a few hours, but I wouldn’t make it any earlier than that. And most fruits are usually at their best when they’re sliced just before they’re eaten. Good news though — this recipe is quick and easy to make.
