Pomegranate Whip
3/4 oz. grenadine
1/4 oz. maple syrup reduction
1/4 oz. fresh lime juice
1 dash Aztec chocolate bitters
1 oz. fresh egg white (pasteurized if you like)
Tools: shaker, strainer
Glass: coupe
Garnish: rosemary sprig, cocktail cherry
Combine all of the ingredients in a shaker. Dry shake to emulsify the egg white, then add ice and shake again, vigorously. Strain into a chilled coupe, then garnish.
Maple Syrup Reduction Simmer maple syrup in a pan over medium heat until it thickens. Remove from the heat and allow it to cool completely.
