Rovollo, a new Italian restaurant and wine room from the team behind Mille Vini, has officially opened at 25 Martin Place. The venue blends classic Italian hospitality within a polished CBD setting – think marble finishes, murals, and a carbonara trolley for a tableside flame-tossing experience.
The drinks speak for themselves, with a 250-bottle wine list that includes Barolo, Champagne, and local producers, with 25 by the glass. But the cocktails are where things get serious. A grappa-based Amalfi is topped with salted limoncello foam. The Napoli riffs on a martini with charred focaccia vermouth and burrata whey – and the Venezia splices a Spritz and Bellini into one.
Esper Group Director Andrew Wallace says everything, right down to the hand-painted side plates, has been carefully considered.
“We want the care and love we’re pouring into the venue to be felt by our guests, so that when they’re here they’re doing more than just consuming a meal,” Wallace said.
Executive chef Cami Feliciano and head chef Zane Buchanan are behind a menu built on handmade pasta, woodfired meats, and flavourful small plates. Highlights include vongole spaghetti with chilli butter, a cheese-wheel pici carbonara, and a 24-layer dark chocolate cake.
“Great Italian food is about letting exceptional ingredients speak for themselves,” Buchanan said.
Open now, Monday to Friday from 12pm–12am, and Saturdays from 4pm.
