Most brewery equipment lists read like a shopping cart. They aren’t wrong about what you need — they’re wrong about when you need it. Order a brewhouse before your floor drains are roughed in, and you’ll be paying contractors to rip up concrete twice.

The Build Order Nobody Puts First: Utilities and Infrastructure

Before any tank arrives, four things need to exist in the space:

  1. Floor drains and trench drains sized for wort, cleaning chemical runoff, and glycol overflow — not just standard building code minimums.

The 7BBL gap is real and worth naming: it doesn’t sit cleanly inside either the nano (≤5BBL) or commercial (≥10BBL) brackets as MICET’s own site divides them, even though 7BBL brewhouses are directly listed in the spec catalog. If your production plan lands here, don’t assume a nano-tier support package or a full commercial-tier automation package is the default — ask specifically what’s included at that size.

How to Sequence an Order: A Step-by-Step Walkthrough

  1. Finalize your annual volume target first, not your tank size. Microbrewery-scale equipment is built around annual output of 15,000 barrels or less; commercial systems scale up from there.
  2. Confirm utilities and drainage with a contractor before signing an equipment quote. Equipment lead times are often shorter than construction permitting timelines, so this step should start first, not run in parallel from day one.
  3. Choose vessel count for your brewhouse based on available labor, not aspiration — a 2-vessel system run by two people looks very different from a 4-vessel system on the same headcount.
  4. Size fermentation and bright tank capacity to brewhouse output, not to a round number. Undersized bright tank capacity is a common bottleneck that shows up only after the brewhouse is already running at full utilization.

Sequencing utilities and drains before equipment selection costs you something real: it slows down the exciting part of the process, since you can’t spec your dream brewhouse until the contractor confirms what the space can support.
