Careers in UK/Europe

I’m an FO at a US Major (ULCC and the most underpaid A320 FO in the US) with just about 200 hours turbine. I have a restricted ATP and can get that removed hopefully by the end of the summer if my hours stay steady. I only have about 1300TT but no failures, completely clean record. Because of the state of US politics my partner and I are starting to consider what it would look like for us to move out of the country. Not considering my career, my first choice would be Scotland but i’m definitely flexible and would consider living anywhere in Europe. (I’ve also never been to Europe)

I’ve read that I could convert my ATP if I have 500 hours as an FO. Is this true? What is the process like. Also I am well aware I wont make as much as a pilot in Europe but what are the best airlines to work for there? What would commuting look like?

Thanks in advance!
