ARCHIVE & MYTH UNVIELS NEW COCKTAIL MENU, SECOND NATURE


Archive & Myth has just launched its first complete menu overhaul, Second Nature.

The menu brings 16 new signature drinks that celebrate texture, curiosity, and a sense of fun, brought to life through inventive techniques and exceptional attention to detail.

Second Nature is not a reinvention but a refinement of the existing programme at The Hippodrome Casino’s hidden gem. Created by industry figure Jack Sotti, bar manager Pedro Montero, award-winning head bartender Laurie Howells and the wider bar team, the new menu reimagines classic cocktails through a playful, textured lens. Throughout, contrasts are embraced with precision martinis served alongside boozy jellies and caviar bumps paired with nostalgic soft serves. The result is a menu that reflects the bar’s evolving identity, producing cocktails as delightful as they are sophisticated. 15 of the serves are available spirit-free for those looking to imbibe without the alcohol content.

The 16 new signature serves celebrate bold flavours, inventive textures, and detailed techniques. Those seeking a more delicate profile, Kir Royale combines Grey Goose Vodka, peach, hay, sherry and Champagne, enhanced by a jelly element, while the Soixante Quinze blends Renais Gin, St-Germain, elderflower, lemon, white chocolate and Torrontés, served with a signature caviar bump. For a more fruit-forward profile, Mizuwari features Toki whisky with banana, fig leaf and jasmine, finished with fluid gels and a crisp plantain garnish while Plum Manhattan layers Rabbit Hole Heigold bourbon with plum, sesame and ginger, elevated with an amazake cheong ferment to create a nuanced take on the classic.

Those looking for lighter, fruit-forward flavours can explore a range of refreshing serves. Hawaiian Margarita combines Codigo Rosa Tequila, baijiu, pineapple, tomato and Manchego through a cheese infusion and tomato ice, creating a vibrant, tropical profile. Melon Bamboo offers a fresh combination of Florio Marsala, honeydew melon and coconut, while Frozen Ooolong Pornstar centres layered passionfruit slushie flavours. Pearl Diver delivers tropical notes of yuzu, shochu and Wray & Nephew, enriched with a rich brown butter Gardenia mix.

The menu also features a selection of rich and comforting serves, Strawb & Cream Negroni combines Botanist Gin, Campari, roasted strawberries and burnt cream for a decadent twist on the classic aperitif. Nightcap Old Fashioned blends Brothers Bond bourbon with Horlicks, cacao and sandalwood through infused barley and milk solids, while the nostalgic Birthday Cake Ramos delivers a playful combination of cream and fizz. Whisky Sour, made with Orchard House whisky, mango, birch and vanilla through a silky yoghurt wash, brings a smooth, velvety texture to the menu.

Rounding out the selection are savoury cocktails Honeyed Carrot Daiquiri, pairing Kakira Rum with Everleaf, carrot and saffron for a silky, savoury interpretation of the Caribbean favourite. Manila Mary blends cultured tomato water, blackened red pepper, fino, passionfruit, calamansi and white pepper air, while Pickle Rickey combines Don Julio Blanco with Granny Smith apple, dill pickle and lime, complete with pickle taco and apple boba. Soyer au Champagne also leans into savoury complexity with Courvoisier VSOP, cherry, cognac, miso cream, woodruff and green mandarin.

The launch of Second Nature marks the next chapter for Archive & Myth as it continues to build on an amazing first 2 years and pushing its creative approach even further.
