This Marry Me Chicken recipe is essentially a good-looking, low-effort chicken dinner dressed for a date night. The chicken is browned first, then finished in the same skillet with a quick pan sauce that gets plenty of flavor from the browned bits left behind. Those sun-dried tomatoes bring a sweet-tart kick with a touch of oil, and the cream, shallots, and dry white wine round everything out, creating a sauce that deserves some serious lovin’ from a piece of crusty bread.

These days the chickens seem to get bigger and bigger with a single breast coming in at under one pound or more sometimes! When I get them, I like to slice them horizontally and get two chicken cutlets out of one breast!

How to Make Marry Me Chicken

  1. Flatten & Season the Chicken. If you’re using whole chicken breasts, gently pound them to an even thickness between sheets of plastic wrap. You can also slice them horizontally into cutlets. Season both sides with salt, pepper, garlic powder, and paprika.
  2. Sear the Chicken. Heat the sun-dried tomato oil in a large skillet over medium-high heat. Add the chicken once the oil is hot and cook until deeply browned on both sides and cooked through (about 6 to 7 minutes). Remove and cover with foil.

  • Turn heat to medium and add the cream, stirring together for 2 minutes. Transfer chicken and accumulated juices into the skillet, spooning sauce over chicken to coat.

  • Serve with sauce spooned over each piece of chicken and top with parsley.
