HOW TO MAKE LAMB PLOV IN INSTANT POT
Ingredients:
- 2 lbs lamb stew meat (cut into chunks)
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 potatoes, peeled and cubed
- 1 lb baby Bella mushrooms, sliced
- 2 1/2 cup of beef or vegetable broth
- 1/2 cup wine (red or white)
- 1/4 cup tomato paste (or 8 oz. tomato sauce)
- 1 tsp thyme
- 1 tsp paprika
- 1 tsp Za’atar (optional)
- Salt and pepper, to taste
- 2 bay leaves
- 2 tbsp cornstarch (for thickening)
Instructions:
Slice lamb into chunks and add to the large dish. Add olive oil and spices mentioned in the recipe. Let marinate while you slice the rest of the ingredients and get ready to start cooking.
Click on Saute and adjust it to High. Once the Instant Pot displays HOT, add the oil and wait for it to start shimmering.
Add the lamb stew meat to the pot and brown it on all sides until nice & lightly brown. This should take about 5-7 minutes. Don’t worry about the bottom of the Instant Pot getting brown, we’ll sear it with wine later and scrape the bottom well.
Remove to a plate and set aside. Continue cooking in batches.
Add sliced onion and saute for a couple of minutes.
Add sliced mushrooms and garlic, toss well to combine.
Pour in the beef or lamb broth, tomato sauce, and wine stirring to combine.
Add the chopped potatoes, carrots, and celery to the pot.
Add seared lamb back to the pot.
Season well. You can use the seasoning listed or use your own combination.
Taste the stew and adjust the seasoning with additional salt and pepper if needed.
Stir well to combine and add bay leaves on top.
Lock the lid, seal the valve.
Pressure cook for 35 minutes, followed by a 10-minute natural pressure release, and manually release the remaining pressure.
Open and stir the stew. Discard the bay leaves.
If you want the stew thicker, click again on Saute.
Mix two tablespoons of cornstarch and one-third cup of water in a measuring cup until fully dissolved. Slowly add the slurry to the stew, stirring to combine.
