

Berner Rösti

Rösti, is originally a farmers’ breakfast from the German-speaking part of Switzerland which could be described as a mix between hash browns and a potato pancake. It can be used as main dish topped with an egg or as side dish alongside a steak or other red meat. Each swiss region has its own version, this recipe is from the Canton of Bern.
Depending on the taste, Cheese (Gruyere or Raclette) can also be added to the bacon and onions.
Ingredients

40 g butter

16 potatoes

300 g bacon, lean

Directions
- Put half of the potatoes in a saucepan, cover with water and cook over medium heat. Peel the finished potatoes and let them cool.
- Cut the bacon and onion into cubes
- Pour out the bacon in a coated pan over medium heat, add the roughly sliced onion and roast.
- roughly grate raw potatoes into the pan and roast.
- grate the cooked potatoes and add them. Add butter and season with salt and pepper.
- Press everything together a little and bake on both sides until golden brown.
