Baby-friendly brandade-style purée with cauliflower and cod (From 8 months)


cToday, I’m sharing a super simple and easy recipe: a baby-friendly brandade with cauliflower and cod.

The cauliflower lightens and softens the purée beautifully. It’s packed with vitamin C and fiber, perfect for little tummies.

The fish balances out the sweetness of the cauliflower, without being overpowering. Cod fillet is especially recommended when first introducing fish into baby’s diet: it’s a lean fish, usually sold boneless and skinless, with a very mild flavor, ideal for tiny taste buds!

Ingredients

for 1 serving – approx. 200g / 7 oz

  • 20g (0.7 oz) cod fillet (skinless and boneless)
  • 110g (3.9 oz) cauliflower florets
  • 60g (2.1 oz) potato
  • 1 small piece of garlic
  • 1 drizzle of olive oil
  • 25ml (0.8 fl oz) whole milk or infant formula
  • A few sprigs of fresh chives and parsley (finely chopped)
  • 1 pinch of breadcrumbs

Preparation of the Brandade

  1. Cut the cauliflower into small florets, peel the potato and cut it into pieces, then crush a small piece of garlic.
  2. Place everything in the steamer basket.

Cooking the Brandade

  1. Steam the cauliflower, potato, and crushed garlic for 14 minutes.
  2. After 7 minutes, add the cod fillet to the steamer basket so it cooks along with the vegetables.
  3. Once everything is cooked, mash the vegetables and garlic finely with a fork, adding the milk (you can warm it slightly beforehand, but it will help cool down the veggies to the perfect serving temperature) and a drizzle of olive oil. Add the chopped parsley and chives (or blend them in if your baby prefers a smoother texture). You should aim for a chunky mash, ideal for introducing textured purees to your baby.
  4. Flake the cod finely, making sure there are absolutely no bones, and place it at the bottom of a small dish.
  5. Spoon the mashed vegetables over the fish.
  6. Sprinkle a little bit of breadcrumbs on top.

Storage

In the refrigerator:
Store in an airtight container for up to 24 hours. Reheat gently before serving.

In the freezer:
This brandade can also be frozen for up to 1 month. Freeze in small portions, then defrost in the refrigerator overnight or at room temperature before gently reheating in a water bath or microwave.

Can I replace cod with another fish?

Yes, you can easily make this recipe with another mild white fish like hake or sole.

My baby is lactose intolerant. Can I adapt the recipe?

Of course! Use a lactose-free infant formula or a plant-based milk suitable for babies (such as fortified almond milk, if approved by your pediatrician).

What can I serve with this purée for a balanced meal?

Add a small portion of fruit compote or soft fruit pieces as a dessert to round out the meal.
