  2. Mix ingredients: Combine 150g of active starter with 250g of pumpkin puree. Add the flours, spices, honey, and salt. Mix until a shaggy dough forms.
  3. Develop gluten: Perform four sets of fold-and-turn over two hours. This helps develop the gluten structure without overworking the dough.
  4. Bulk fermentation: Let the dough ferment at room temperature for 4-6 hours.
  5. Shape and cold-proof: Shape the dough and place it in a proofing basket or bowl. Refrigerate overnight.
  6. Prepare for baking: Preheat your oven to 450°F (230°C) with a Dutch oven inside.
  7. Bake: Transfer the dough to the hot Dutch oven. Bake covered for 30 minutes, then uncovered for 15-20 minutes until the crust is golden brown.
  8. Cool: Allow the bread to cool for at least an hour before slicing.

Tips and Tricks

  • Use canned pumpkin puree for consistency, or make your own by roasting and pureeing fresh pumpkin.
  • If your dough feels too wet, add flour a tablespoon at a time during the folding process.
