
If you’ve ever skipped meal prep because you couldn’t face washing a sink full of dishes afterward, you’re definitely not alone.
After more than a decade of meal prepping—and helping hundreds of thousands of people build meal prep routines through Workweek Lunch—I’ve learned that the biggest obstacle usually isn’t the cooking itself. It’s everything that comes after it.
When meal prep feels like an all-day project with a mountain of dishes, it’s easy to convince yourself you’ll “just figure it out during the week.” Before you know it, you’re staring into the fridge at 6 p.m. wondering what’s for dinner.
That’s exactly why I come back to one-pot and one-pan meals again and again.
They keep cooking simple, cleanup manageable, and they’re some of my favorite recipes to prep ahead because they reheat beautifully throughout the week. Many of them also freeze well, which means your future self gets an easy meal on those weeks when cooking just isn’t happening.
The recipes below aren’t just quick dinners—they’re recipes that work especially well for meal prep. Every recipe on this list checks a few important boxes:
- Ready in about 30 minutes or less
- Uses everyday ingredients
- Reheats well for lunches and dinners
- Creates minimal cleanup
- Flexible enough for swaps based on what you already have

Before we dive into the recipes, here are a few tips that will help you nail weekly meal prep and dinners each night like a pro.
Keep a few pantry staples stocked
One of the biggest mistakes I made when I first started meal prepping was shopping for one recipe at a time.
I’d buy exactly what I needed for one meal, then have to make another grocery trip a few days later because I was missing one ingredient for the next recipe.
Now I always keep a few basics on hand:
- Rice
- Pasta
- Canned beans
- Canned tomatoes
- Broth
- Lentils
- Olive oil
- A few favorite spices
Most of the recipes below build from these ingredients, making it much easier to throw together dinner without another trip to the grocery store. It also helps reduce food waste because many ingredients get used across multiple meals.

Make your freezer work for you
Cook freezer meals in advance: Help yourself out by taking a few hours over the weekend to prepare freezer meals for yourself and your family. This eliminates all the prep work for you when you want to enjoy these meals. They’re also a great backup plan when things start to get hectic or you find yourself with zero groceries in the house. The freezer is your friend, always. (Except when it isn’t, and that’s only after it’s helped you out of a jam and it’s empty again, lol!)
With these freezer meals, you can enjoy a freshly cooked meal in 15 minutes without having to chop, measure, or slice a thing for your weekly meal prep.
Plan your week… not a perfect week
Make a meal plan. This one may seem like common sense, but it is truly the most helpful tip to reduce stress regarding food during the week.
Take a few minutes to map out your week and see when you have social events, when you will be eating at home, etc. Be realistic. If you know you’re going to run out of gas (ie., inspiration) by mid-week, or you know when those crunch periods are during dinner, then prep ahead.
Ask yourself:
- Which nights will I actually be home?
- Do I already have dinner plans?
- When will I realistically have the energy to cook?
- Which meals would make the biggest difference this week?
Sometimes prepping just two or three meals is enough to make the entire week feel easier.

Is it safe to meal prep for the week?
Yes! It’s safe to store your weekly meal preps in the fridge for up to five days. Note that meal prep food safety has a lot to do with how food is cooked initially (make sure you initially cook meat all the way through) and cool it down a little before storing it in the fridge.
Over the years, I’ve found that meal prep quality depends just as much on how you store your food as how you cook it.
A few simple habits make a big difference:
- Cook proteins completely before storing them.
- Divide large batches into smaller containers so they cool more quickly.
- Refrigerate meals within about two hours of cooking.
- Store meals in airtight containers.
- Reheat leftovers until they’re heated all the way through.
If I know I won’t eat something within a few days, I freeze it instead. That’s one reason you’ll notice so many freezer-friendly recipes in this collection—they help reduce food waste while giving you more flexibility during busy weeks.

This soup is comforting and is a great budget meal prep idea. You can definitely add more veggies if you have them on hand or simply want to add more volume to this one-pot vegetarian meal. It’s that versatile, but it also can be frozen for up to a month.

Yes, you read that right. Risotto that you can meal prep AND is ready in 30 minutes. It seems too good to be true. This recipe is simple yet delicious and super comforting after a long day. Plus, it is kid-friendly, too! To enjoy as a meal prepped lunch or dinner, simply store it in the fridge and microwave as needed.

This soup is chicken noodle meets Thai curry and it is simply amazing. Seriously, you will want to keep making this soup over and over again! It’s freezer friendly, too.

A creamy pasta dish is a perfect way to unwind after a busy day. It’s even better when it only takes 30 minutes to make! You can easily add any odds and ends you have in the fridge such as leftover veggies or chicken. This easy pasta dish is sure to become a favorite for weekly meal prep.

Need healthy meal prep ideas for the week? This Mediterranean skillet features chickpeas, tomatoes, spinach, and quinoa! Top it off with feta and olives for more of that delicious Mediterranean flavor. It will keep in the fridge for about 5 days, which makes it perfect for meal prepping.
