Celery & Chili


Over the winter I made different skillet chili recipes, and they all came out delicious! Yum! I was lucky enough to have a bunch of cans of diced tomatoes and tomato paste, and many great herbs and spices on hand.

The great thing about chili is that it can be made in so many different ways, you could try a different recipe every time.

When I first started making chili, I used three different types of meat each time. This can be costly, so eventually I started using half the meat and a couple cans of beans. With the onset of diabetes, I am back to making all-meat versions. Beans just have more carbs than my body can handle right now. I am now making my chili’s with two meats. To stretch my dollar a little, I am using ground beef (the price is inconsistent), and ground turkey (at only $1.98 per pound). I don’t like ground turkey on its own, but mixed with ground beef and all the seasonings, it is amazing in these chili recipes

The last time I made a skillet chili; I had it with a side of celery. I used the chili as a dip for the celery, and the flavor combinations were amazing. A new favorite meal for me!

It’s been a mostly cold, cloudy, and often rainy and windy spring thus far, so I decided to make a chili this weekend. I only had to buy the meat. Everything else I have on hand. The meat costs came it at just under $8.00, which will be the cost to make this dish. I’ll have to see how many servings I get so I can figure out the cost per serving.
