This was a refreshing smoothie on a warm morning. I had it for breakfast and used frozen fruit to it cold. I had this and a trail mix before leaving for work.
My blood sugar was so good this morning, for which I am grateful. Some days I am honestly left wondering what the heck I did wrong, but not this morning. Adding more vegetables in place of heavier foods helps with this. My digestion also seems to be better, at least for the time being. The fiber is helpful for that, as well as regulating blood sugar. I am learning things all the time about nutrition, diabetes, and gut health and have been slowly adding more fiber over the past year. When I can access what I need, things are good.
I am using a personal blender for this smoothie.
Pineapple Smoothie
Serves: 1
Ingredients
1/4 c water
kale
2 celery tops
- Pour water into blender cup. fill the cup with kale and add the celery tops.
- Blend all of this together to liquify.
- Add:
2 tbsp coconut milk powder
1 tsp ground flax
1 tsp chia
1 tsp hemp hearts
1 tsp pea protein powder
6-7 chunks frozen pineapple
1 small banana, frozen (4 chunks)
water to the fill line
- Blend everything well. Enjoy!
Notes
- Smoothies are particularly refreshing on a warm day if you are using frozen fruits and vegetables when making them. It’s kinda like a milkshake.
- I bought a big bag of kale two weeks ago and am still using it in smoothies, smoothie bowls, and salads. The bag was expensive, I thought, at almost $6 for something people can grow for less, but considering I’ve only used half the bag so far it was a more frugal buy than I had originally thought.
