I love spring! The warmer weather. The wildlife. The sunny days and colorful flowers. I also love taking long walks eating lighter foods. Salads, smoothies, and smoothie bowls are fun and delicious, and help me to my health goals in check.
Because my blood sugar has been higher sometimes over the last couple of months than I would like, I want to be eating more fresh vegetables and less heavier foods. The smoothies and smoothie bowls I have been making are helping me to get more greens into my body than I normally would eat. Having more greens and eliminating some of the fruit will be helpful.
I am using a personal blender for this smoothie.
Pineapple & Strawberry Smoothie
Serves: 1
Ingredients
1/4 c water
kale
2 celery tops
- Pour water into blender cup. fill the cup with kale and add the celery tops.
- Blend all of this together to liquify.
- Add:
1 tbsp coconut milk powder
1 tsp ground flax
1 tsp chia
1 tsp pea protein powder
4 chunks frozen pineapple
3 large strawberries
water to the fill line
- Blend everything well. Enjoy!
Notes
- Smoothies are particularly refreshing on a warm day if you are using frozen fruits and vegetables when making them. It’s kinda like a milkshake.
- I bought a big bag of kale two weeks ago and am still using it in smoothies, smoothie bowls, and salads. The bag was expensive, I thought, at almost $6 for something people can grow for less, but considering I’ve only used half the bag so far it was a more frugal buy than I had originally thought.
