While I prefer soft tacos now, tacos are still very much a thing for me. I use a little more veg than I used to, and zero net carb tortillas because of the diabetes.
Something I am unsure of with store-bought taco seasoning is the soybean oil. I am almost positive it is not organic. It also has corn flour and starch that I think is unnecessary for a chili mix. Because of these things, I make my own seasoning. But you are free to use store-bought. It tastes super good.
Ground beef is a hard one for me. I love it. I try to get the grass-fed kind without so many things in it, but sometimes the budget does not allow. This was one of those weeks. I’m trying to stretch out meat into at least another serving when I get it, and managed to stretch this taco meat into 7 servings of 2 tacos each when it would have been maybe 5 before.
To be honest, I don’t eat meat with every meal, or even every single day now. I am aware that we don’t really need meat to get the protein and fat we need, so I have cut back a lot on my meat consumption. I’m not ready to give it up entirely. But with the cost of this type of food, I am happy to eat more vegetables.
Taco Meat
Serves: 7, at least (2 tacos per meal)
Ingredients
1 heaping tbsp garlic in oil
1 pound ground beef
1/2 cup diced tomato
2-4 ounces tomato paste, according to taste
2.5 tbsp taco seasoning
- Heat 1 heaping tablespoon of garlic and oil in a skillet on medium-high heat for a couple of minutes.
- Add ground beef and break it up into small pieces. Stir every couple of minutes until cooked.
- Add the diced tomato, tomato paste, and taco seasoning, stirring well to combine.
- Simmer about 20 to 30 minutes to allow all the flavors to come together.
- Remove from heat.
Notes
- I used diced tomato I had frozen from last week’s meal prep. You could also use canned diced tomato.
- Two ounces of tomato paste is probably enough, but I had about four ounces in the freezer that needed to be eaten.
Serving Suggestions
- Serve on tortillas with cheese and lots of vegetables.
- Serve on salad.
- Freeze in individual servings.
