Work Meals for the Week of 3/24


It’s spring! I am so happy. Now, if Mother Nature would just let me have this, all would be great. Last week we had a day in the 50’s, yesterday it snowed again. I am ready for warmer temps! How about you?

Ever since Saturday I have been feeling unmotivated, tired, and a little emotional. Even the sunny day we had didn’t help me to feel any better, and those days usually do. I ran out of my D3 a couple of weeks ago, and a couple of months ago I started cutting back my collagen intake by half. I think I need those things more than I thought. More of both are on the way, as well as elderberry for my immune system. I have to get that energy back, and this achy body needs a lift. Some supplements are necessary.

Thankfully I had decided on easy meal prep for the week while shopping last Thursday. The featured image shows what my meal packs look like this week. Pickles in ham and cheese rolls, cantaloupe, and a simple salad of lettuce, tomato, cucumber and just a wee bit of avocado oil. Super tasty, and easy to throw together.

Notes:

  • I used up the last of the pickles from the jar I opened for last week’s meals, so I cut some cucumber rounds and put them in the jar with the pickle juice. They will sit in the fridge until next week, and I will use the other jar of store-bought pickles if I want any more this week.
  • I have some slices of American cheese left. They are in the fridge but can easily get thrown into the freezer if I decide I won’t eat them soon.
  • I used the rest of that cucumber, as well as the last of the lettuce from last week’s salad, in the salad for this week.
  • The tomatoes I have left over will stay in the fridge in case I want to snack on them. If I decide not to I will chop them up and throw them in the freezer to be used later.
  • Trying for a no waste week.

I love these three-compartment containers that I found on Amazon. I have three glass and a plastic one. The compartments make it easy for me to portion out and separate foods. They help me to put together the perfect meal packs for work.

Currently looking for meal pack ideas for the warmer weather months. I need variety because I get so bored with food often. Ones that consist of foods that do not need to be heated. When the busy season starts at work, there is no time for heating meals, and I need packs that I can just take a bite from in between checking people in. It sometimes takes me more than an hour to finish a meal. For me, each meal pack should have a healthy fat, a protein, and some vegetables. Fiber is also a good idea. I do have diabetes so no- to low- carb/sugar is a must. Any ideas? Please share!
