Last week’s meal packs were so good! I love when I can truly enjoy what I bring to work for food. As I get bored with food every few months, I have to admit that sometimes I am less than happy with the foods I am making. That’s when it’s time for a change.
With the change of seasons, I am wanting lighter foods right now. My meal packs for work are based going to often be based off salads or other raw veggies. This week, rather than having the Garlic Butter Chicken I have already made a couple of times, I decided to add some lemon and oregano to the recipe. If you like a stronger lemon flavor, you can certainly use more lemon juice in this recipe. I might next time. But the taste was pleasant, and I am happy with the change.
The base is a Simple Tossed Side Salad with the addition of the Lemon Garlic Chicken I made on Sunday. My sides were just some raw cabbage and grapes. I was satisfied with this meal last night and am looking forward to eating the same the next few nights. These meal packs have been in-line with my eating for diabetes.
