I made super easy meals for this week. I’d made some seasoned ground meat on Saturday, so used some of that as a springboard for my work meals. Using my glass three-compartment containers, I filled one section in each with the seasoned ground meat.
I then made an easy salad of chopped cucumber, tomato, and mozzarella and mild cheddar cheeses with just a tiny amount of avocado oil. I filled the second section of each container with this salad and put the rest of the tomato and cucumber bits into a jar in the refrigerator to use at home for lunches. The rest of the cheese also went into a container in the refrigerator.
Then I cut up most of what was left of the raw cabbage and filled the last section of each container with that. I also put the last of that raw cabbage in a plastic baggie to snack on this week.
I have some zero net carb tortillas I can throw into my lunch sack if I want to make tacos with the meat and salad.
There you have it, my work week meals. Easy, but good.
