Ingredients

Basic ratio for every 1 cup of seeds and nuts:

  • 1 cup mixed seeds and nuts
  • 1 tablespoon cornstarch
  • 2 tablespoons chia seeds or ground flaxseed (binding)
  • 5 tablespoons water
  • ¼ to ½ teaspoon sea salt

Suggested mix for 1 cup:

  • 2 tablespoons chopped walnuts
  • 2 tablespoons chopped almonds
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons sunflower seeds
  • 2 tablespoons chia seeds
  • 1 tablespoon sesame seeds (optional topping)

Adjust the seeds and nuts based on what you have on hand.

Instructions

  1. In a bowl, combine all seeds, nuts, and chia seeds.
  2. Add cornstarch and salt, and mix well.
  3. Gradually add water, stirring thoroughly. Let sit for 15–20 minutes to allow the chia to form a gel-like texture. Add a little extra water if needed.
  4. Preheat oven to 160–170°C (320–340°F). Line a baking tray with parchment paper.
  5. Spread the mixture thinly (2–3 mm thick) on the tray and sprinkle sesame seeds on top if desired.
  6. Score into squares or rectangles with a knife.
  7. Bake for 15 minutes, flip carefully, and bake for another 15 minutes until golden and crisp.
  8. Let cool completely and store in an airtight container.
