Why I Cook Chicken Breast at 385°F

I’ve cooked a lot of chicken in my air fryer over the years, and boneless chicken breast is one of the easiest cuts to overcook. After testing different temperatures, I found 385°F is my sweet spot – it cooks the chicken quickly without drying it out.

I’ve also found that the thickness of the chicken makes a big difference. If one end of the breast is a bit thicker, I give it a few gentle whacks with a meat mallet so it cooks more evenly.

This is one of my go-to recipes for a quick dinner, and the tender chicken is perfect for salads, wraps, Buffalo Chicken Dip, or Chicken Alfredo Stuffed Shells.

Ingredients You’ll Need

  • Boneless skinless chicken breasts. Try to use breasts that are similar in size so they cook at about the same rate.
  • Olive oil. Helps the seasoning stick and gives the chicken a nicely browned exterior. Avocado oil works too.
  • Seasonings. Garlic powder, onion powder, dried oregano, salt, and black pepper give the chicken plenty of flavor without overpowering it.

How to Make Air Fryer Chicken Breast

Prepare the chicken. Pat the chicken breasts dry with paper towels. If they’re much thicker on one end, place them between two pieces of plastic wrap or parchment paper and gently pound the thickest part until they’re more even.

Add oil. Drizzle the chicken with olive oil and rub it over both sides.

Season. Combine the garlic powder, onion powder, oregano, salt, and black pepper in a small bowl. Sprinkle the seasoning evenly over both sides of the chicken and rub it in.

Air fry. Preheat the air fryer to 385°F. Arrange the chicken breasts in a single layer in the air fryer basket, leaving some space between them.

Air fry for 16-18 minutes, flipping halfway through. I start checking the chicken at about 14 minutes since smaller breasts may be done sooner. Cook until the thickest part of each breast reaches 165°F when checked with an instant read thermometer. The cooking time may be a few minutes longer depending on the size of your chicken breasts.

Rest. Transfer the chicken to a plate or cutting board and let it rest for 5 minutes before slicing and serving.

Variations

  • Lemon Herb: Add 1 teaspoon of lemon zest to the seasoning and squeeze fresh lemon juice over the chicken before serving.
  • Spicy: Add ¼-½ teaspoon of cayenne pepper or red pepper flakes.

  • Italian: Swap the oregano for Italian seasoning and add a pinch of dried basil.

Jeri’s Top Tips

  • Even out thick chicken breasts. A few gentle whacks with a meat mallet help them cook evenly so the thin end doesn’t dry out before the thick end is done.
  • Don’t overcrowd the basket. Leave space between each breast so the hot air can circulate around the chicken.
  • Start checking early. I start checking the chicken at about 14 minutes with a digital thermometer. Chicken breasts vary in size, so remove each one when the thickest part reaches 165°F.
  • Don’t cook chicken longer just for more color. This isn’t breaded chicken, so the outside will be lightly golden rather than crispy.
  • Let it rest. Give the chicken 5 minutes before slicing to help keep it juicy.

Storage and Reheating

  • Refrigerator: Store leftover chicken in an airtight container in the fridge for 3-4 days.
  • Freezer: Place cooled chicken in a freezer-safe container or bag and freeze for up to 3 months. Thaw overnight in the refrigerator.
  • Reheating: Reheat in the air fryer at 350°F for 3-4 minutes, just until warmed through. You can also reheat sliced chicken in a skillet over medium-low heat with a splash of chicken broth or water.

How long do you cook chicken breast in the air fryer?

Whole boneless skinless chicken breasts usually take 16-18 minutes at 385°F, depending on their thickness and your air fryer. Start checking the internal temperature around 14 minutes and cook until the thickest part reaches 165°F.

Can I cook frozen chicken breasts in the air fryer?

Why is my air fryer chicken breast dry?

It’s most likely overcooked. Chicken breast is lean and can dry out quickly, so use a meat thermometer and remove it from the air fryer once it reaches 165°F. Pounding very thick breasts to a more even thickness also helps.

Do I need to flip chicken breast in the air fryer?

Yes, I recommend flipping the chicken halfway through so both sides cook and brown evenly.

What’s the difference between this recipe and your thin chicken breast recipe?
