Tips for This Week’s Meal Plan
- On Sunday, be sure be to prepare extra chicken and rice to use later in the week. You can serve the chicken al pastor and rice as a bowl OR make tacos using the chicken and serve the rice on the side.
- Use romaine lettuce to make a southwest salad (to serve with leftover baked chicken al pastor) and a side salad (and homemade ranch) to serve alongside the mac and cheese and chicken parmesan.
- Use canned chipotles in adobo for the chicken al pastor and the sofritas.
- Don’t like tofu? Make extra chicken al pastor.
- Use extra cheese from mac and cheese to slice and make grilled cheese.
