Green Bean Gnocchi for Baby


Today we are going to make a gnocchi recipe. But not classic gnocchi made only with potato…

I decided to add green beans to my gnocchi recipe. Alix likes the taste of green beans, but their texture in their whole form is not her favorite. As a purée, cream soup, or soup: no problem at all, she loves them! So I had to find an original way, and especially one with a more substantial texture, to help her enjoy them differently: as gnocchi!

This is a fairly simple recipe to make, and above all it uses only a few ingredients: potato, green beans, garlic, and flour. Toss them with tomato sauce or ricotta: absolutely delicious!

Plus, it is a little like play dough, so feel free to get kids involved from around age 2 to 2 1/2!

Here is what you need to prepare this green bean and potato gnocchi recipe for baby (from 11 months, makes about 25 small gnocchi):

    We will start by trimming our green beans. Wash them, then place them in the steamer basket.

    Now for the potato. Wash it, peel it, then cut it into thin slices. Place it in the steamer basket as well.

    Finally, our garlic clove. Cut it in half and place only one half in the steamer basket.

    Cooking

    Start steaming: here we go for 8 minutes!

    At the end of cooking, let the vegetables cool, and most importantly, if possible, drain them well with a paper towel or a clean dish towel. Then blend them to get a smooth, even purée (do not add any cooking water when blending!). Place this purée in a mixing bowl.

    Add the flour to the vegetables and mix everything together to form a ball. Feel free to add a little flour if the dough is too sticky!

    Then shape the gnocchi dough into a long log on a clean, floured work surface. It should be about 1/2 inch (1.5 cm) in diameter. Flour your hands too; you will see it will stick less, and the dough will be much easier to work with 😉

    Next, cut this log into small pieces about 1/2 inch (1.5 cm) wide.

    To finish, shape them into small oval balls, then slide the tines of a fork all around them (okay, I didn’t manage to do it, so I just made 3 little lines haha!).

    Let the green bean gnocchi rest for about 15 minutes under a clean dish towel while you bring water to a boil in a saucepan. Once the water is boiling, add all the gnocchi at once (watch out for burns!) and cook until they rise to the surface!

    Then drain the gnocchi and let them cool before serving to baby.

    Serve with a good homemade tomato sauce like in the recipe here, or with a little ricotta and a light drizzle of olive oil on top: delicious!

    If you would like to add a slightly crispy texture, you can absolutely brown the gnocchi for a few moments in a pan with a little butter 😉

    You can freeze this recipe before cooking, but make sure the gnocchi do not touch each other while freezing: flour your gnocchi well so they do not stick together.
