Easy Vinaigrette


Just over a week ago I made strawberry vinegar, and on Sunday I decided to turn that into a vinaigrette. I eat a lot of salads, and I usually do not have dressings or the like on them, but sometimes a girl just wants to have something a little different. So, I decided to make a vinaigrette.

I did a little research and learned that a lot of people make this with 1 part vinegar to 2 parts oil. While others make it half and half. I chose a 1:2 ratio of vinegar to oil because I don’t care as much for the taste of vinegar. I don’t find this ratio particularly over-powering. Please make this with whatever ratios work best for you.

Strawberry tops, what I used to make the vinegar, are good sources of antioxidants and vitamin C, and they may also help to promote healthy functioning of the body. Who couldn’t use a little help with that?

Apple Cider Vinegar has potassium, magnesium, calcium, and phosphorus. Vinegar supports better digestion and nutrient absorption. It might also help with such things as weight loss, diabetes, and cholesterol, though they might still need to do more research on these things. There can also be risks involved with using vinegar, so I suggest researching vinegar before using them regularly.

Olive oil has anti-bacterial effects and may also help with type 2 diabetes. I am hoping it does, as a person with that type of diabetes. My understanding is that healthy fats do have a place in the diabetic diet, at least for type 2. I am no doctor, no nutritionist, but the healthy fats don’t spike blood sugar so, when combined with many other foods, can help to even out blood sugars after a meal or at least help blood sugar to not spike as high. I still have more research to do on this claim, and I urge you to do the same. It’s important for each of us to take control of our diets and our health.

You could use any type of vinegar for this.

Easy Vinaigrette

Ingredients:

1 part strawberry vinegar

2 parts extra virgin olive oil

  1. Simply combine these two ingredients in a jar. Cover and shake.

I drizzle a teaspoon of this over a small salad but will likely use a tablespoon on a large salad.

Super easy!
