Tomato Soup


I started feeling off the middle of last week, and by Thursday at the end of my shift I wasn’t able to talk hardly at all. Not fun. Over the weekend I was recuperating. Mostly resting. Not talking much at all hoping that, by today (Monday) I could come back to work and people could hear me. While I am still not feeling the greatest, I am talking much better than I was – though my voice seems lower according to my boss.

I ate pineapple chunks over the weekend for the Bromelain, and sipped warmed beef brother, both of which my amazing bestest dropped off to me on Friday night after she got out of work. She left it on my porch and got back to her car, then texted me that it was there so I couldn’t infest her with my illness. I drank tons of healing teas, and water.

I also made tomato soup and am sharing with you how I do that.

Ingredients

15-ounce can of organic Tomato Sauce (does not have to be organic)

Almond Milk (I made mine from almond powder. Use whatever kind of milk you have available.)

1/2 tsp Sea Salt to taste

1/4 tsp Pepper to taste

1 Tbsp Parsley

2 Tbsp Ground Flax

1/4 cup of Nutritional Yeast

  1. Put the tomato sauce in a saucepan. Fill can about 1/4th with milk and swish it around to try to get most of the sauce from the sides, then pour that liquid into the pan.
  2. Add the other ingredients except the milk and mix well. Turn the stove on low.
  3. Add milk until you have the consistency you want. You can add more later if the soup thickens more than you want.
  4. Simmer until heated through.
  5. Decide if you need more liquid.
  6. Taste test for seasonings, adding more if needed.
  7. Remove from heat.
  8. Enjoy

Notes

  • When heating the leftovers you will likely need to add more liquid. I did both times, using beef broth. I used organic lower sodium broth but use what you have on hand. You could also use water, any kind of milk, or liquid from cooking vegetables.
  • If you have extras on hand, you could top with some oregano, cheese, and sour cream.
  • You could also add some corn or diced tomato just before serving.
