Roast the Garlic
Trim the top from a whole head of garlic, drizzle with olive oil, wrap loosely in foil, and place it on the pan beside the vegetables.

Roast Until Caramelized
Roast at 425°F, stirring the vegetables halfway through, until they’re tender with browned edges and the tomatoes have just started to burst.

Make the Garlic Herb Dressing
Squeeze the soft roasted garlic into a bowl, mash until smooth, then stir in the lemon juice, parsley, and thyme until well combined.

Toss and Serve
